Goujons of Plaice with Tartare Sauce

Ingredients

Serves 4

120g / 4 1/2 oz Plain Flour
1 Egg, separated
15ml / 1 tbsp Olive Oil
Salt and Pepper
300ml / 1/2 pt Milk
450g / 1lb Plaice, skinned and cut into strips
Oil for deep-frying
150ml 1/4 pt Tartare Sauce

Perperation and Cooking

1.  Reserve 15g / 1/2 oz of flour and whisk the remainder with the egg yolk, oil, a pinch of salt and the milk to form a batter.

2.  Whisk the egg white until frothy (eletric mixer is easier) and fold into the batter.  Season the reserved flour with salt and pepper and roll the strips of plaice in it.  Dip the fish in the batter and fry in hot oil for about 5 minutes until crisp and nicely browned.

3.  Drain well on kitchen paper and serve with the tartare sauce, a nice crisp salad and boiled potatoes!
