All on site at Lowestoft in Suffolk, four simple wooden sheds and one firebrick kiln. All powered simply by wind direction and smouldering soft wood and oak dust, large seasoned oak chunks for the firebrick kiln.

Our latest edition all singing and dancing digital kiln from Germany allows us to do more unusual and old fashioned smoked fish i.e. whole Dutch Mackerel and Buckling (hot smoked herring) providing us with a very intense and powerful flavour ideal for whole round fish.
